A bakery built on one baker's obsession with doing it right.

Maplewood Bakehouse & Cafe opened in Burlington in 2016, when Elena Vasquez decided that after a decade in professional kitchens, it was time to build a bakery entirely on her own terms.

Meet the Baker

Elena Vasquez, Owner & Head Baker

Elena spent nearly ten years as a pastry chef in restaurant kitchens across New England before opening Maplewood in 2016 — determined to build a bakery where quality never got rushed to hit a ticket time. She trained under classically minded pastry chefs, then spent two years apprenticing with a small-batch sourdough baker before deciding Burlington needed a scratch bakery of its own. Today, Elena still shapes the morning's first loaves herself, tastes every new seasonal recipe before it reaches the case, and personally consults on every wedding and celebration cake that leaves the kitchen.

Quality & Local Ingredients

Every loaf is naturally leavened and given the time it needs — our sourdough alone takes three full days from start to bake. We source flour, dairy, and produce from Vermont farms whenever the season allows, because a bakery in Burlington should taste like Burlington.

Most days, we're baking for the walk-in customer who just wants to know what's fresh today — but we also set aside real time every week for custom wedding cakes, celebrations, and catering, planned out with our customers weeks or months in advance.
